Obviously you try these tactics when the beholder is awake, aware and on-guard. Getting him drunk first is highly reccomended.
Disintegrating a burning ceiling or wall is going to further weaken a weakened structure, and rain flaming rubble down on top of him. If nothing else, it puts him off balance, hopefully wounds him, and he still has no idea that you did it, making your second attempt a little more likely to succeed.
But you're right, those aren't the best plans. I still say a good poison meal is just what the beholder needs.
