I'm putting together a Summoner character, too. I'm pretty much stuck with core books, but I've taked my DM into allowing select stuff from Tome and Blood and MotP. I've got some ideas, but haven't settled on anything yet.
An interesting avenue to take is the Holy Summoner...cleric that focuses on summoning creatures from their god's home plane. Eventually working into the Thaumaturgist PrC (I know it's in the 3.5 SRD...forget which book it's originally from). You're limited to creatures that share your diety's alignment, but you can work with that, especially if you're allowed custom summon lists.
An Empowered summon can be a lot of fun...when you use it to summon lots of lesser creatures. A swarm of up to 7 fire-templated rats or owls as a 3rd level spell...I can think of fun things to do with that...
