I'd base, for example, a vampire barbarian's rage ability on Charisma. There is already precedent for changing Con-based abilities to Cha-based abilities for undead creatures.

Are there really raging undead in WoTC books? If so, how is the rage ability handled in them. Like a barbarian, or like the rage ability of certain dire animals?

Yeah... Plus, they of course won't get any Con increases (and extra hp, etc.) from Rage, either.

I wonder about being fatigued after the Rage, though; I think they ought to be immune to fatigue but it's not mentioned in the MM.
Then again, it could also be one of the advantages of not having a Con score - but I don't know where to look that up...
 

Since I'm a cruel GM...

...I'd give a barbarian undead a +4 to Str, a +4 to Dex, negate the AC penalty, and ignore the Will save bonus. No HP increases and no post-rage fatigue applicable, all in addition to basing duration on Cha instead of Con.
 

I think that you could affect thier movement to make up fo rthe lack of a Con score when it comes to determining fatigue.
