Character Ideas

I'm currently playing a level 3 Champion Fighter in my D&D game. After 5th level I want to look into multi-classing, and I was wondering what ideas you would recommend. I don't care how optimized the build is, looking for a fun character. I have a 13 or greater in every stat.

D&D is an RPG. A role playing game. Characters play a role in a story. Let the story be your guide.

Maybe your PCs encountered a powerful Fey, Demon, Devil, etc... Would your PC be enticed into making a pact and becoming a warlock?

Maybe there is a huge wizard's concalve in the town where they find their home. Perhaps he struck up a friendship with a wizard...

Or the rogues guild wants to hire him on for a mission and he picks up a few tricks....

Or the local clergy sees potential in him and ...

Or he likes bears...

Whatever is going on in the story - use that for inspiration.

You can also show teamwork with the other players and choose to fill in a role that may be lacking or missing. If your group lacks a mage, you pick up a few levels and everyone is happy. You can also pick what makes you happy regardless and make the others fill the roles.

I may pick a few levels of thief, but it is better if you are a dex build or if your DM lets you backstab with an ax or such.

What setting / world? What party members? What has happened so far in the story? It's my opinion that multiclassing should fit the storyline and character development.

However, without that information, if you are just "looking for a fun character", then probably a Bard gives the most versatile extras: With only one level you can already pick up viscious mockery for some roleplaying (and insulting) the unfriendly NPCs in your world, but you can also get Healing Word to help out the party. And you get Bardic Inspiration.

Champion mixes well with rogue for example.
You don´t have to worry about any resources and champion lvl 7 and rogue level 11 will ensure that you never roll below average initiative or any dex, str or con related ability check.
If you want heavy damage in a possible round 1, you can be asassin. If you like throwing daggers or Javelins or hand axes, thief is a nice alternative (fast hands) Fast hands might also allow you to use healer´s kit as a bonus action, with the feat you might even heal, depending on your DM´s discretion. You will also be a very fast climber due to second story work and remarkable athlete.
Other rogue classes may give exceptional two weapon fighting (swashbuckler), spellcasting (arcane trickster) or outdoor talent as a pseudo ranger (scout).

So that would be my recommendation. Maybe post your stats and background and fighting style/equipment choice I can be more precise.

If there's no story attached, staying in one class is just as fun as multiclassing into two. It's all just different ways to roll dice and add numbers together.
