Of all the complete books, Adventurer is certainly my favorite, and should I ever go back to running D&D, would probably see the most use. In my current Arcana Evolved game, however, I've found use for quite a bit of the content.
Scout- I've always disliked the execution of the Ranger class, so Scout is a neat alternative. While the Rogue, Akashic, Unfettered, and Totem Warrior may overlap some aspects of the class, the Scout is uniquely suited to the Woodsman/Guerilla tactics fighter, and thus earned it's place in my game. I've made extensive use of it for NPCs, and have had two players take levels in it.
Bloodhound- Gotta have bounty hunters.
Dread Pirate- My setting consists of countries on the edges of an inland sea, who do almost all their trading by sea. Obviously, this has to be there.
Exemplar- Now the Rogue can stop complaining about his friend's abysmal sneak checks and do something about it ;-)
Highland Stalker- Once skirmish is in the system, I may as well run with it.
Streetfighter- My setting has large Urban Areas, and this seemed a natural fit.
Thief-Acrobat - see comments on Streetfighter.
Virtuoso- Grants Bardic Music without the need to convert the spellcasting.
Wild-Plains Outrider- seemed very cool and flavorful for those Totem Warriors who want to ride their companions.
