Crafting could be done as a skill challenge. Say the party wants to craft a sword. Begin with a Nature check (to know which types of metal are best to make a sword) and a history check (to determine the best design for a sword). Then have several Athletic and Endurance checks (to keep the fire hot and to beat the metal into a sword). If it is to be a magic sword, throw in Arcana. Success means you have a new sword. Failure means you have a twisted lump of metal.

Crafting a holy symbol could use Religion (obviously) and Nature (to pick out the right material with which to make the symbol). Thievery could be used to carefully insert a saint's relic (like a finger-bone) into the symbol to give it power.
