The problem with updating to 3.5 is that a lot of people contributed to the site, and getting that many folk to revise their stuff would be tough, if not impossible. Tracking them all down would be one of the biggest hurdles, since not all of them seem to still be posting at EN World. I wouldn't want to revise the work of anyone else, since that seems a bit presumptuous to me.
I haven't gone through the site to check on what would need to be revised for 3.5. Matter of fact, I'm still reading 3.5 myself. I'd guess most of the material on the site wouldn't really need to be changed.
As hellbender says, Decipher's LotR RPG contains a lot of material that would be easy to use in a D&D game, whether it's 3.0 or 3.5. The games is a lot like a variant d20 game, but using 2d6 as the core mechanic. Edges, a component of the game, equate easily to Feats, as do many of the order (class) abilities.
