In COCd20 they have the mummy as a template (which is a good thing) and in D20 Modern they have it as a standard creature.. Is it me or would more templates added to D20 Modern be a good thing? and what the hell happened to the BEAST type of creature in D20 modern?

If you're the GM, then that is up to you. If you ask me, I'd rather have many options, even though I won't use all of them, but it's there in case I want to try them in the future.

If you want you can use the template from CoC or perhaps a template from Dragon #300(?). I do know they have some additional undead templates posted in the D&D web site.

Are you referring to the Moreaus?

Since the distinction between Animals and Beasts in D&D is that Beasts are essentially non-historical (i.e. imaginary) Animals, perhaps they decided to eliminate the category and lump them together. Shapeshifters are gone as well, perhaps for similar reasons, as evidenced by the Werewolf template, where the sample creature is listed as a "humanoid".

I wonder if these changes will be reflected in D&D 3.5?

Edit: Another possibility - perhaps they'll show up in Urban Arcana.
