demon hunter

I am looking for a demon hunter / demon slayer type of Prestige class. I am especially interested in one that would be useful to a high level wizard. Any suggestions?

Well there's one called "the Sworn Slayer". It's pretty easy for any class though you do tend to lose spellcasting power doing so.

Goodman Games has a book called the "Demon Hunter's Handbook" which has a great deal of interesting Demon related topics. It may help you, even if you don't persue any particular PRC Class choice.

Dragon 324. It's designed to fight any sworn foe, but it works well for fighting outsiders just as much as say, a drow hating elf, a human hating dwarf, etc.

Pretty easy? For a wizard? *chuckle*
SWORN SLAYER (Dragon #324, p. 81).
Prerequisite: Base Attack Bonus: +6. (and other stuff)
Besides, it's more for the fighting woman than the wizardly oriented adventureress, like the Knight of the Chalice or the Harmonium Peacekeeper.
KNIGHT OF THE CHALICE (Complete Warrior, p. 53).
HARMONIUM PEACEKEEPER (Dragon #315, p. 47).
The Shadowbane Inquisitor is more for the Rogue/Ranger types.
SHADOWBANE INQUISITOR (Complete Adventurer, p. 68).
The Apostle of Peace is more appropriate but has an own spell list.
APOSTLE OF PEACE (Book of Exalted Deeds, p. 51).

Full spellcasting progression and bonusses against undead or evil outsiders (choose one or the other). A wizard can qualify at level 9 by taking Dismissal and a bunch of knowledge: religion and Knowledge: Planes as well as by being particularly faithful to the teachings of his deity.
