Just a note - NBOS's ScreenMonkey, which will be released probably within the next week or two, has exactly this. It's mostly designed for online gaming, but it does feture multi-monitor support for use at the game table. It lets the GM have one view, and project a player view onto a second monitor. (The beta that's online doesnt have this, but the final build does).

Assuming you print out the map, just "funtac" sheets of black paper over the parts of the map the PCs have yet to explore. Very low tech but it works.
