It's a pretty common dessert in my family. Growing up, we were always putting dairy on our pies: whipped cream, ice cream, shredded cheese, custard, buttercream, all of it.
 

No, but a common breakfast dish is an extremely aged cheese like black brie, topped with some kind of extremely sweet fruit jam and an acid like citrus juice or verjus and then baked. There's no crust, but it's kind of a deconstructed cheese and pie-filling meal.

Never heard of cheese on apple pie, but I like pineapple on pizza, so what do I know?
As somebody that worked a lot of pizza in the 80's and 90's, pineapple was an uncontroversial standard topping, although usually pared with ham, until the internet arrived and people started fake outrage over fairly common things to drive clicks/troll and/or because they forgot anchovies exist.

As for cheese on apple pie, I have heard of it but never actually seen it done. Sliced apples and cheese together as an appetizer, snack, or part of some sort of tray has always been fairly common.

what is verdigris?
and where is that dish from?

*I only know Verdigris as the green patina of oxidised copper, which I thought was toxic
