D&D 3E/3.5 Do we have 3.5 stats for the phoenix?

also, there is only supposed to be one pheonix but third says nothing about it.

Yeah, but the same could be said about a lot of monsters. Minotaurs for example. They probably toned it down to make it not a unique monster.

It's an Immortal?

Not in D&D. In the mythological tradition, howver, there is only one phoenix. When it feels it is about to die, it creates a pyre and immolates itself. From the pyre emerges a young phoenix. Rinse and repeat.
