Drinking holy water and barfing it up on a monster...

No Acid damage. With regards to the holy water, I would possibly allow it if he had drunk it within just a few rounds/minutes. Had longer time passed, I would also had ruled it had been tainted, for a lack of better word.

So what sort of check to you have to make to induce a vomit? Does the character in question have a few ranks in profession: Bulimic?

Either a concentration check, or ranks in profession: carnival geek

As others have said, I'd probably let it work if the holy water had been recently swallowed. Probably give bonus XP for creative thinking (and possibly roleplaying, depending on the situation).

Sometimes the Players get to do cool things with their PC's. :)

Absolutey not! This is a slippery slope. The next thing would be to drink a healing potion and get healed, and then also vomit it up against an undead doing damage.

This is not a cool thing, it's childish and ludicrous.

Vomiting on someone or something will not do acid damage. Or rather, not do damage that is measurable in hit point terms.

The real trick is to have a holy-water blood transfusion, so that when a vampire bites you it gets a mouthfull of holy blood.
