Encounter Level and Challenge Rating

Oh, and when you difinitely want a single strong monster, try grab something appropriate for a 4-men party and then give it some levels of Suviver prestige class (Savage Species). It will not increase neither BAB nor spellcasting abiliy. But gives additional HP, very good saves, and other abilities such as uncanny dodge and evasion.

Have sheets of pre-rolled dice numbers. This will stop the problem of hunting for dice. Simplify as much as possible, and hand off as much as you can.

A big problem is going to be keeping the interest of all the players all the time. So if you can co-opt them to help you, even by playing villains, so much the better. For example, if several characters get left behind to recuperate or guard something, don't let their players get bored, but have them play the minor villains against the rest of the players.

IOC we have 8 players, and I'm the assistant DM. I run the fights, since I was the Rule Lawyer as a player. The DM is more of the storytelling type, so it works out very well.

As far as CRs go, we usually play it by ear, but we up the CRs by 1 either through numbers or advancement. Sometimes we put in "waves" of monsters. If it gets too hard, we don't send in the next wave, if it's too easy, we pile it on.

Sometimes we get near TPKs anyway, but usually it works well.
