It is interesting that SF just doesn't produce the sprawling epics that you expect in fantasy. Even where there is a series, often the first book is stand-alone and later books are in response to popularity. In contrast, fantasy series by an unknown writer can start off with the assumption of 3-5 books in the series.

Anyway, some more recommendations:

Vance - Planet of Adventure and Arimenta Station
Orson Scott Card - Ender's Game series
Pohl - Heechee series, although lots of people don't like the first book "Gateway" and so don't bother reading the rest

Maybe Donaldson's Gap series, although I haven't read it. I would actually skip Riverworld - I find Farmer to have interesting set-up concepts but poor execution or resolution.

Sorry, have a tendancy to go old school when it comes to scifi.
 


I recommend J. Gregory Keyes' "Age of Unreason" series. It's not strictly sci-fi, but then you mention "A Game of Thrones" so you might not be looking for strict sci-fi. It's set on an alternate 18th century Earth, where science has developed along magical lines. Very interesting, well written, and enjoyable series.
