My guess would be that it's a post-apocalyptic themed Survivor clone, where they do challenges to simulate surviving in the wasteland. A vault-based reality series is also possible, but that seems more expensive and harder to have much variety that's on theme for Fallout, as the Vaults tend to be kind of one note experiences.

I can't say I'm exactly excited about it, but I am curious about the barrage of multimedia-franchise-branded reality shows we'll get if this is a success.

There was one of those years ago. I forget what it was called, but I remember they rendered down a pig to use as biodiesel for a generator.
