Thanks for all the replies! I've been away from ENWorld for almost 10 years, it's awesome to be back and get so many thoughtful and interesting comments!
I ended up just letting it work, quickly narrating the 3-hour-hunt through the city streets to help set the tone for when they'd find their quarry. Adding in checks & challenges didn't feel like it would contribute much to the session this time. But now I know a lot more than I did about how hunting dogs (and their handlers) work!
