I still don't understand what "old school" is.

That's because it's more of an umbrella term encompassing various different playstyles and thoughts that share being at odds with the more modern trends in D&D. The Old School ideals are sometimes also at odds with each other, just as "New School" isn't a cohesive playstyle.

Because "old school" happens on the DM side and doesn't really depend on what's written on the character sheets.
