This huge, 10 foot tall bird appears to be nothing so much as a giant chicken. It glares menacingly at you as it crows warningly....

No one knows where this strange creature originated. It is clear that it was once an ordinary chicken but magical experiments have turned this farm fowl into a monsterous bird, capable of causing real harm to the unwary.

Giant Chickens are aggressive and territorial and will attack anything they percieve as a threat. Which means, they will attack anything of their size or smaller on a whim.

COMBAT:
WING BUFFET: Giant chickens are flightless, but they can still deliver powerful blows with their wings, causing 1d6+4 hit points of damage

BITE (Peck): Giant chickens are able to bite their opponents, causing 1d6+4 hit points of damage

CLAW (Spur): Giant chickens have the ability to claw their opponents, causing 2d6+4 hit points of damage.

WHIRLWIND ATTACK: if it's beheaded (a 50% chance of this happening with all slashing weapons) it goes berserk for a 1d6 rounds and attacks with a Whirlwind Attack as a standard action during those rounds, causing 3d6+4 hit points of damage.

No need for the Augmented subtype. They started as animals and still are animals. Augmented is only used when the type changes.

That needs work. I assume it should read:
Attack: Bite +6 melee (1d6+4)
Full Attack: Bite +6 melee (1d6+4) and 2 claws +1 melee (1d6+2), or wing buffet +6 melee (2d6+4)

Since they are normal attacks, peck and wing buffet should not be part of the special attacks line. Run should be one of the feats.

Needs serious work. Also, should be added to the Special Attacks line.
Beheaded Whirlwind (Ex): When killed by a slashing weapon, there is a 50% chance for the giant chicken to be beheaded and run berserk instead of dying instantly. For 1d6 rounds, the giant chicken may attack as though using the Whirlwind Attack feat, except that it only takes a standard action to do so. It cannot use its bite attack.

No, not always, just usually. The horrid animals from Eberron for example are Neutral Evil.

Giant Chicken? Is that anything like a Carver (Deinonychus)?

Yes. Heh, heh, heh, And btw, it is worth it. payed the equivalent of 29$ for it, but it was worth it. I friggin love the drop in taxes on books that was put into place last year. :D
