...katanas from what I understand uses the demascus folding style. They have a high tension when it comes to bending and breaking. Simple banging on the table won't break them...

Close, but not quite - they use a foldover method that creates hundred of thousands of layers (geometric progression). Damascus steel was strong because of its refinement process, not a folding technique.

And even well made katanas can break if banged at a bad angle against a strong object.

That's true of any sword. None should be used as a club, even a well made, heavy sword can snap just like that.

The funny thing is that a badly made heavy sword forged of a low grade steel won't. It bends instead.

Yeah, but they are more likely to break in normal use. That and most of them are so dull you're more likely to kill someone by clubing them with the flat of the blade instead.
