How about the HWK-290? (Force Unleashed guide, pg118)
Decent starting speed, lots of hit points (useful for space combat), good starting armament, minimal crew and space for a few passengers (about your average party size plus a couple others). Also has a heck of a Dexterity score that blows most other transports out of the water, meaning that a devoted pilot can can really get some use out of Vehicular Combat without having to hope for a really lucky roll. It's also a CEC design, which means it has 5 unused emplacement points (as per SotG), which can easily be put towards increasing the sublights, adding shields, and jacking up the hyperdrive multiplier plus possibly adding a back-up hyperdrive, depending on what the PCs can afford.
Errata changed the cargo capacity from 150 to 75 tons though, so less room to either haul stuff or to convert to emplacement points for even more upgrades, but it probably doesn't need as much work as most stock freighter designs would.
The Ghtroc is pretty cool as well, and a PC in one of my last campaigns had that as her signature ship, even going so far as to get it pretty well tricked-out; not quite Falcon level, but then she didn't have even a third of the problems Han and Chewie did. Of course, the fact that her co-pilot was a genius Outlaw Tech didn't hurt either.
