D&D General Halfling Fighter/Thief build advice

I recently started recreating very old characters that I had played in the past and one of them is Figgen, a Halfling Fighter/Thief. I have a pretty solid idea for the first half. I want to take his first level in Rogue, then go Fighter Champion until level 12 (Rogue 1/Fighter 11) to get the second Extra Attack.

His stats after his Background is Str 13 Dex 17 Con 14 Int 12 Wis 12 Cha 8.

For Feats I was going to go with Dual Wielder, then Defensive Duelist. After that I was thinking Skulker, Sentinel or Mage Slayer. Not sure so I would be happy to hear suggestions there.

Really what I came here for is what to do at high levels I was thinking of taking 2 more levels of Rogue to get the Thief subclass, then back to Fighter to level 18 (Rogue 3/Fighter 15). From here both classes' next level give me a Ability Score Improvement. Am I right in thinking that I can use it for an Epic Boon? I would probably go with Fighter 16 first. Then I could go with Rogue 4 for another feat (another Epic Boon?) or I could take an extra level of Fighter for a second Action Surge and Indomitable. Alternatively I could also make it to Rogue 5, but I'm not sure if Cunning Strike, Uncanny Dodge and another d6 of Sneak Attack is worth it.

I would like to play this character in the next game I play, however I know it is unlikely that I will actually get high enough level to matter, but I like to have it figured out just in case.

Taking your first level in Fighter rather than Rogue would get you 2 extra hit points and more fighter features. Given that Figgen will have more levels in Fighter than in Rogue this seems like a good idea. I would take the Wayfarer (what 2014 called Urchin) Background so that he has more Rogue skills at Level 1, also with both the Lucky Feat (from Wayfarer) and Halflings Species Luck you benefit from both.

I would get two extra hit points and heavy armor proficiency, but I'm not going to use heavy armor and starting with rogue would give me an extra skill point. So I think I would rather go that route.

I also don't remember what the reason was for giving him a 13 Strength. I might put it into Int or Wis and see if there is a Feat that fits to bump it up to 14. Once I hit 20 Dex it doesn't make sense to take Feats that increase Dex, so I need to find something else to take.

I like to build characters that will be strong and have a unique playstyle. There's a number of different paths for this.

My first concept might be something like Single Classed Fighter, focused on being the best 1v1 swordsman. As such I'd take Dual Wielder, Defensive Duelist and Skulker. I'd theme the guy as thief via his background.

My 2nd might be similar but instead of best 1v1 swordsman i'm focused on defending my allies. For this one I'm going level 5 Fighter Level 4 Rogue ASAP. I'm taking Sentinel and Defensive Duelist ASAP. The basic concept is to use cunning action to position myself near an enemy, the threat of sentinel keeps them focused on me and defensive duelist keeps me alive. The high mobility from cunning action keeps me in range of all my allies, so I can fall back to protect them at anytime. I'd probably go more rogue heavy for this character as the combination of sneak attack + sentinel with vex should be highly effective, even if mostly as a deterrent from hitting allies. The option to poison on cunning strike is also pretty sweet. Since I'd focus on rogue here then i'd also take mage slayer to help with my saves.

The third is the concept of a character that cunningly maneuvers to strike down priority targets. I'm going Dual Wielder, Defensive Duelist and Mage Slayer for this one. I'm ensuring I take 2 levels of rogue by early tier 2 for cunning action. I'd probably go for fighter 11 next.

Before talking high level maybe think some on what path your leaning toward with the lower level character.
