If you're a mom, good on ya!
This year, contrary to family custom, Mom decided she wanted to celebrate the holiday. Kinda at the last minute, too. And absolutely no buffet, either.
Oh yeah, and she wanted a cake, specifically a white cake with pineapple filling and buttercream frosting. That's a pretty common cake in New Orleans (our hometown), but they don't make them 'round these here parts.
And I'm not much of a baker...
And yet, I managed to pull it off: ribeye steaks and lobster tails (with drawn butter, of course), butter sautéed baby spinach with leeks, seasoned rosemary diced baby Yukon gold potatoes, and- tah-DAAAAHHHH, a white cake with pineapple filling and buttercream frosting. All made by yours truly.
(In all honesty, the cake was NOT pretty, but it tasted alright...which is the important part.)
A meal fit for a Queen...which, of course, is what moms deserve!
And I'm darn near dead on my feet.
