I don't handle that randomly. There may be random elements involved (perception checks, stealth checks, etc.), but if they're infiltrating a compound, I'll do my best to determine what guard forces are present and their stations and their patrol routes.

So do I, but I will also put guards on the random encounter chart, because if they only patrol on a regular schedule and route, they're not very good guards.

However, as I noted above, my random encounter tables tend more toward slice-of-life encounters, so random encounters for a chateau may include a guard patrol, but they also include encounters like a valet returning from the kitchen with an armload of filched food, or a maid and a coachman canoodling in an alcove, or a guard teaching the baron's son some fencing tricks, or the baron's major domo inspecting the chateau.
