I'd go with Amalthea , a nod to both "The Last Unicorn" and Greek mythology.

Someone beat me to Amalthea from The last unicorn.

Totally go with that name....TLU was like...the coolest cartoon ever when i was a kid.

She was introduced as the Lady Amalthea in her human form....has a nice ring to it, considering the whole impression of majesty you get form unicorns...or at least I do.
