Hireling Costs

Hmm, is there a list of hireling costs anywhere?

If a group of pcs own a ship, how much do they have to pay their crew? Are there any resources on this?

The old Arms and Equipment Guide has an entire section on Hirelings. Covers everything from the common craftsman to outright mercenaries. Might need to change some of the costs for 3.5 or if you use a different money standard than RAW.

Here's what it says about sailors
Sailor(crew) Profession(sailor) Commoner or Expert !sp/day Active
Sailor(mate) Profession(sailor), Intimidate Expert 4sp/day Active

The pcs are being given a ship but have none of the skills required to navigate or sail. They need 7 people/shift to run the ship successfully. How much does this cost them?

I'm going to give them the option of a "salty contract"- all spoils are divided into one share for the owners (pcs), one for the officers (captain, ship's druid, bosun) and one for the crew. Or just pay their daily/monthly wages.
 

The DMG has some hireling costs, too, on a table in the Campaigns chapter. None of them in the DMG is called 'sailor' or whatnot, but there's stuff listed there like laborers, craftsmen, mercenaries, mercenary leaders, lackeys/valets, porters, teamsters, and such. Arms & Equipment Guide has more, but the DMG does at least have around a dozen or more typical hireling costs listed.

Obviously, seafaring books would probably have some such costs related to ships and sailors. Dunno if Stormwrack does or not. Seafarer's Handbook by Fantasy Flight Games has costs for various kinds of sailing ship crewmen, IIRC, and that's the only seafaring book I have for D20 or D&D at present.
