Aha! I've found something already. M is the 13th letter of the english alphabet, and it's Hebrew counterpart, Mem, is the 13th letter of the hebraic alphabet! Obviously, when looked at in the perspective of the entire sentance, Derian wishes the reader to infer that steak tastes best when prepaired according to Jewish law, i.e., slaughtered and salted in the Kosher fashion.
O, or, more commonly, Oh!, is an expression of surprise and astonishment. I think we can safely assume that Mr. Cypher had not expected steak to taste as good as it does when prepaired in the kosher manner, and was surprised at this discovery.
Hmm . . . very interesting, indeed. Could it by that Derian is simply magnifying his previous point (see 'o', above), or is he attmpting to get an idea that is new altogether through? Perhaps he is atempting something completely different, but having to make the entire word symbolize a cow prevented him from doing so in the way he wanted? This requires further investigation!
