I’d do +2 to one ability Score, +1 to another ability Score, and you get to choose a second Background.

One of my homebrew settings (Tenesia) uses a homebrew variant human. I've posted it here and gotten some nice compliments on it. Maybe this, or something similar, might work for you.

I like the idea of moving Variant Humans to be the standard human, but replace the earned feat with one of six "subraces," each one nominally themed on the six stats. Strong humans would get a smattering of strength-related abilities that might mirror some of the benefits of the Athlete or Grappler feats, dexterous humans would get benefits similar to the Mobile feat, and so on.

That way, you get the benefit of a quasi-feat, but can still use the variant human without rolling feats into the game. You also get the benefit of a more coherent racial theme toward adaptability and variety.
