Human: Horse (mount), Dog (pet)

Dwarf: Boar (mount), Badger (pet)

Elves: Deer (mount), Birds (pet)

Gnomes: Dog (mount), All burrowing mammals (pet)

Halfling: Pony (mount), Dog (pet)

Orc: Moose! (mount), Wolf (pet)

Goblin: Worg (mount), Rat (pet)

They're called targs - sorry, no stats, but you probably could do worse than using dire badger or dire wolverine stats to represent them (maybe beef up the Strength and/or Constitution scores a bit, if you wanted).

I have always like the picture of a dire mastadon with abour twenty dwarves with a crossbows and perhaps even a ballista to be the dwarven "calvary". Perhaps using bears as fast attack mounts. I have seen some nice minis of the latter, Reaper I think.
 

In the Mystara setting, from Gaz 6: The Dwarves of Rockhome, I believe that subterreanean lizards (that ran on two legs) were used as mounts.
 

Horse was late coming to man and has been romanticized a good bit so for me. Horse to man as anvil and hammer to dwarf. It is of power and work.

As for dog to man, as clan to dwarf. This is a view of being loyal, of trust.

Elf - Griffon & Elven Cat (lynx with elf traits)
Dwarf - None & Bighorn Ram
Gnome - Pony & Badger
Halfling - Riding Dog/Wolf & Ferret/Mouse
Orc - Dire Boar/Rhinoceros & warthog
Goblin - Worg & Rat
Gnoll - None & Hyena
Hobgoblin - Horse & Vulture
 


I have always had an image of Dwarven cavalry riding on warpigs (Boars, not Dire) Axes and hammers held high.


A friend of mine once played a gnomish bat rider.

Elves would do well with more exotic mounts, maybe hippogriffs.

orcish races would be drawn to creatures of strength and power. Bears and dire animals.

Halflings I think would ride dogs or larger cats.

of course, you could always simply use horses scaled (bred) for size.
 

Maybe this is just the fact I ripped halfling culture open and Frankensteined it to make the little buggers interesting, but...felldrakes (MMII). They're medium-sized, NG...and even human knights should think twice about countercharging a lance of spitters.

Just takes a little rework of their history.
