How do I bookmark a thread so I always go to the last page or post?

Well this may do what you want ... go to the start of a thread and click on the link that says "First Unread Post" -- it will take you to the first post of the thread after your last login time.

That does indeed lead to the first unread post. However, it actually creates a link to a specific post. Bookmarking it just creates a link to that post. How do you bookmark a thread that way.

In practical terms,

I want to bookmark my PbP thread here:
http://www.enworld.org/forums/showthread.php?p=1294448

Can I create bookmark that will always lead me to the end of the thread, and save me a click (I know, it sounds insignifican't, but I'm on dial-up)?

Well, with big threads of more than 10 or so pages, this kind of link shows up:

http://www.enworld.org/forums/showthread.php?t=68169&goto=lastpost

So you could probably link the equivalent of your pbp thread, which would be:
http://www.enworld.org/forums/showthread.php?p=1294448&goto=lastpost

Hope that helps.

In the control panel, you can set the option to show a thread Linear: newest first. this might be what you are looking for.
