How do i counter UNDEAD as a dm?

In my party i have a wizard (undead summoner) and a fighter and an NPC cleric LEVEL 3-5.

How do i treat the party, so my monsters are not too easy to kill...

Also, the creatures that the wizard summons have damage reduction to all bludgeonic (do i spell it correctly, dunno) hits.

If you dont understand what i mean let me make it clear:
When the party counters creatures that use their claws and bite to attack, the wizard summons an undead skeleton, in front of the party, so that my creatures wont attack them immediately. This way the fighter (and cleric) have all the time they need to kill the monsters avoiding a large ammount of hits.

What could i do to make the encounters have a special taste ??

To give better advices I want to know at which level your party is.

The summoner summons only one skeleton? Use more enemies.
A hellhound, CR 3 has a breath weapon.
 

First of all, Summon Undead spell is a little bit overpowered in 3.5e. Even with PGF errata, casters can summon really strong skeletons. Maybe you should bring generic "large skeleton" stats from 3.0e MM.

Second, according to 3.5e MM p.312 "natural attack", Bite attacks inflicts "piercing, slashing, and bludgeoning damage". So bite attacks can penetrate both DR X/Slashing (zombie) and DR X/Bludgeoning (Skeleton).

Third, as already mentioned, you can either use area attack. Or, clever monster (remember most magical beasts and aberrations are more intelligent than they look to be) can always ignore skeleton and attack the caster.

Fourth, use clerics and other "undead hunter" type opponents. Known necromancers are hunted by good zealots.

Bludgeoning. Pick monsters that can bludgeon. My favorite monsters are classed humans.

Taking a lesson from my MMORPG the creature that does the most damage draws aggro, that is, the monster attacks whoever hurts it most. Also, use smarter monsters and tactics.
 

As for the aggro...many creatures like animals will not attack unnatural creatures like undead unless forced to. So a bear might attack your party but not the undead.
 

Remember that summon spells are full round spells; attackers should have time to close with the group before the skeletons appear, taking away the wizard's ability to interpose them. (Of course, they should only do this if they would do this; barring a Spellcraft check, your monsters have no clue what spell the wizard is casting.)

Undead are also dead meat which walks. :) Some humanoids might cook them before they eat them. :)
