If you want to run multiple monitors off of a single card I'd recommend you look at Matrox (www.matrox.com).
If you want to get a projector figure out if you're primarily going to use it for data or video and what sort of ambient lighting you're going to have. The cheapest new projector I can think of is an Infocus X1 which you can pick up at your local Best Buy for $999. It's 800x600 (svga) and 1100 lumens. Your normal desktop is probably 1024x768 or higher so you'll need to drop your resolution. If you're going to have the lights on you'll probably want the lumens rating to be 2000+, but I use an old CRT projector that's closer to 300 lumens and you can still watch TV with a couple of lights on. If you have access to somebody selling business projectors look at Sanyo. Almost anyone can sell them, they have a product at just about any price point.
You'll probably be looking at LCD vs. DLP technology. LCD is going to be cheaper and brighter on average, so I'd recommend that for Powerpoint. DLP is going to look less digital (less pixel structure) and have better blacks so it'd be better for movies.
Anyways....you're probably looking at spending around $2000-$3000 for a decent projector that can do 1024x768(xga) at around 2000 lumens. Check out www.projectorcentral.com for exact models.
