I don't think slitting the throat of a held enemy in the heat of battle is evil at all. You can't risk them making their will save and getting free, and if you knock them out, then have to retreat, next time you fight, there they are, good as new. Now, if the battle is over, and the enemy fighter is sitting unarmed, begging for his life, and you kill him because you don't want to be bothered with prisoners... that's a neutral act in my opionion. Not evil, because you're not killing him for fun, but not good either. Plenty of warrior codes have 'take no prisoners' aspects, I wouldn't consider that evil.
