I'm pretty sure WotC has said that all SWSE rulebooks will be square.

The books came from a long time ago in a galaxy far, far away. Since then the universe has expanded, stretching out, which is why our paper is 8.5 x 11, instead of the 9 x 9 that the midichlorians intended.

So that they're obviously different from hardcover, non-gaming Star Wars reference books, apparently.

To distinguish themselves from the other cliched rulebook format (roughly 8.5 x 11). That and since the core rulebook is square, the rest of the line might as well be consistent.
