Let's stat out the Knights of King Arthur

D&D is probably unsuited to stat Arthurian knights of any movie (unless you plan to have but fighters all looking almost the same).

For this 2004 movie I would rather use Grim Tales or Iron Heroes.

For an archetypal Mallory-type game you could better use Legends of Excalibur (RPGobjects). Or you could use D&D 3.5 + Heroes of Code (a PDF) + A Question of Honor: A Guidebook to Knights (a lso a PDF).

From what I hear, something like Grim Tales or d20 Modern would suit the 2004 movie best. The 1e L&L/D&DD stats are not bad, and the level ranges for Knights of Quality & Knights of Renown I think are right, however the levels would not work in 3e since Arthur is 14th but his top knights are 20th - workable in 1e, too huge a disparity in 3e.
I would basically take a 'top' level and work down from there. For the film Excalibur I'd probably make that top level 12 or 14, that would be Arthur, Merlin & Lancelot, probably Uther too, then Gawain, Percival, Morgana & Mordred a bit lower, etc.

I think you could keep the 1e levels, so long as you remember not to base the character equipment on level, instead base character equipment on legend, wealth, and social status.

Arthur has artifacts like Excalibur. Those artifacts make up for Lancelot being higher level.

1e levels
King Arthur: level 14 Paladin/level 5 Bard
Str 18/52, Int 18, Wis 19, Dex 16, Con 18, Chr 18

Sir Galahad: level 20 Paladin
Str 18/00, Int 15, Wis 18, Dex 18, Con 18, Chr 18

Sir Launcelot Du Lake: level 20 Paladin
Str 19, Int 14, Wis 13, Dex 18, Con 18, Chr 18

Other Knights
Knights of Renown: level 8 to 10 fighter (average stat =15, min 10)
Knights of Quality: level 10 to 13 fighter (average stat =16, min 13)
Various statted knights, level 13 to 17 fighter

Arthur's Scabbard preventing him from being cut, but he could still be bludgeoned. In 1e terms, he took half damage from thrusting or slashing weapons and full damage from bludgeoning attacks. 3e equivalent might be DR 10/Bludgeoning.

Arthur's Excalibur was +5 Sword of Sharpness in 1e terms. Equivalent in D&D 3e would be a +5 Vorpal Sword. There was also an epic artifact version of Excalibur in one of the Dragon articles that came out after the Epic level handbook.

For 3.5e, I would make the following class changes.

King Arthur ... trade the Bard levels for levels from a prestige class that is of the legendary leader type. Warmaster, Legendary Leader, something like that.

Lancelot ... Pal 10/Cavalier 10

Galahad ... Pal 10/Knight of the Chalice10

Most of the Knights Fighter X/Cavalier X
