List of mutable spells

What are all the PHB spells (and any non-PHB ones, if you can think of them) that allow you to choose your own effect? I'm not talking about spells that have a limited list of options you can choose from (such as Wall of Iron or Contagion) but spells whose effects are totally open-ended, where the variety is limited only by what you can imagine or research (such as any book with spells in it for Wish or any book with monsters in it for Polymorph).

So far I can think of-

Alter Self
Animate Dead
Bestow Curse (if you allow custom curses)
Comprehend Languages
Disguise Self
Limited Wish
Miracle
Permanent Image
Persistent Image
Polymorph
Polymorph Any Object
Tongues
Wish
Use these examples as guidelines for any others you can think of.

Baleful Polymorph (duh)
Create Undead
Planar Ally, Lesser/normal/Greater
Spell Immunity, lesser/Greater
Summon Monster I through IX
Summon Nature's Ally I through IX


Reason why I bring this up is to balance the usefulness of some of these magics by having the caster choose the effect of the magic when preparing or learning the magic, similar to how they fixed the Polymorph spells. (Which book is that fix from again?)

As for Wish, L-Wish, and Miracle, I was planning just to eliminate them or make them 'artifact' spells that can't be learned by mere mortals, only cast from discovered scrolls and other magic items and such.

By the time any caster is casting those with regularity, the PCs are far more than "mere mortals."

Warning:
This will severely weaken the Sorcerer, who is already one of the weakest of the Full Casters.

Wish and Limited Wish don't need to be watered down, nor does the Shadow line. In the case of (Limited) Wish, the XP cost and the higher-level spell slot keeps it in line. In the case of the Shadow line, the extra save, mandatory SR, and the higher level spell-slot keeps it in line (do note: they can get out of line with Shadow-specific PrC's that reduce the impact of the extra save, or give bonuses to penetrating SR - get rid of those, and you'll be okay).
