Everquest has reworked versions of all of the stereotypical classes.
Star Wars classes can used w/a little work.

I know you mentioned AU already, but the non-magic classes are pretty much usable as-is.

Similar to AU some of the books (Wheel of Time & the aforementioned Sovereign Stone) have alt. magic systems & their magic using classes aren't always directly usable.

Well Dragon 310 has the rest of the good and natural paladins
Dragon 312 has the three evil ones.

They’re all quite nice but if you break them up via their power rank levels then you could make your own paladins based upon deity and not alignment. Like that god of nature you always wanted to have paladins for.

Book of Righteous Green Ronin (Holy Warrior) also their master class series has one core class a book.
 


Kingdom of Kalamar's Player's Handbook has variant core classes, like the Brigand.

Molokai Source Book has a Shaman core class.

There is a book, by Penumbra? named Occult Lore, I think, which has some core classes. I think. It's been a while since I looked at that.
 


I believe all of AEG's books have core classes in them - Mercenaries and Wilds certainly do - and I could list the ones from those books, but I think generally they're a little overpowered, which would mean you'd have to do work on them anyhow.
 

Mongoose has a series of mini-booklets, called “Power Classes,“ each with a new 20-level core class. Checking off the Mongoose website, it looks like the series so far consists of:

Assassin
Gladiator
Exorcist
Noble
Knight
Artificer
Hedge Wizard
Explorer
Fool
Alchemist
Pirate
Cabalist

They’re skinny, the size of a piece of paper folded in half lengthwise (kind of like those AEG mini-adventures that came out soon after 3E hit).

I posted a thread like this awhile ago (maybe somebody with the search function can look it up) and somebody referred me to the Netbook of Classes (I think??) which had a nice indexed list of all the core classes and what their sources were. I don't have the link anymore, though, so you'll have to google it up.
