I mean, they tend to have lots of immunities as well. Case in point, Golems. The CR 5 Flesh Golem has immunities to lightning, poison, and weapon damage from non-magical, non-adamantine weapons, plus immunities to charmed, exhaustion, frightened, paralyzed, petrified, and poisoned, as well as immunity to any spell or effect that would "alter it's form", and, of course, magic resistance. One Flesh Golem is a Medium Encounter for my group, and it's a good thing the Fighter has at least one magic weapon to use- there's not even rules for adamantine weapons in the core rules! They'll win the fight, but only with good old fashioned hit point damage, most likely. The only good thing about this (very iconic) monster is that it lacks save proficiencies, and magic resistance isn't likely to help it too much on Dex, Int, and Cha saves. Or hey, how about the CR 3 Bearded Devil, resistant to cold, non-magical weapons that aren't silvered, immune to fire, poison, and the poisoned condition, magic resistant but this time with proficiency in three saves? The game is littered with critters like this at every challenge rating, and it only gets worse over time. Sure, there's also monsters without special defenses out there, but as I said, if I wanted to avoid this sort of thing, I'd have to warp my campaign to avoid using many iconic creatures or redesign them.
