I am of the "magic fills in the rest" school of thought here. And some illusions (shadow evocation/conjuration) go even further, giving their illusions actual "bite".
I think I might go so far as to allow a mage to cast one of a snipe he has never seen before, and go "so *that's* what a snipe looks like!" but I wouldn't let him duplicate specific beings unless he has seen them or a good representation of them (painting, etc.).
But that could be my house rule, as it does say "as visualized by you".
