To pick up (and send) mail from multiple e-mail addresses, simply create a new "Personality" for each e-mail address. One personality (usually the first one you create) will be the default one ("dominant," in Eudora parlance) and when you compose a new message, this will be the one you send from by default.
If you Reply to a message, you will by default send from the e-mail address to which the original was mailed (may or may not be the "dominant" address).
In either case, you can just click on the "from" field to get a drop-down of possible e-mail addresses to send from if you want to change it for some reason.
When you check your mail, it will ask you for each addy's password in succession - if you don't want to pick up from a particular account (for whatever reason), you can hit "enter" with a blank password field, "escape" or press the "Cancel" button and Eudora will happily hop along to the next addy. I believe that you can also "take an addy out of the automatic rotation" in the personality options screen.
Warning - if you want to keep straight what is coming from where, you may want to add folders and filters to shoot email into the appropriate folder based on the "to" field in the e-mail. If you don't care and just want it all shuttled into your inbox, don't worry about it.
