Thinking about this upcoming battle tonight with my players against some mind flayer vampires. Which to open with, mind blast or dominate?

I would mind blast first and then try to dominate someone un stunned.
or
to be really sneaky, try to dominate someone who is stunned and then when they come out of it have them ripp through their allies

Definitely mind blast first as it will allow for domination.

Mindblast obviously; you can get lots of targets in a mindblast cone!
Since you said plural vampires, I'd have them set up overlapping cones of attack to force the PC's to make as many saves as possible. Since it is a purely mental attack I can't see any reason why the vampiric mindflayers can't do it when gaseous...

That should work. A creature loses access to Su abilities while in gaseous form, but mindblast is Sp. With multiple vampires, I'd go with what Plane Sailing suggested for the overlapping cones of attack, and have at least one vampire trying to dominate at the same time (which you can't do in gaseous form, unfortunately).

Welp, they're level 14 characters so their saves are pretty good. I was very hard to get them stunned or dominated. Once I started slapping them around with the vapire energy drain it was much easier to do so. They ended up surviving but later all but one getting killed in another encounter. But that's another story....
