*********** spell Owl’s Wisdom

The transmuted creature becomes wiser. The spell grants a +4 enhancement bonus to Wisdom, adding the usual benefit to Wisdom-related skills. Clerics, druids, paladins, and rangers (and other Wisdom-based spellcasters) who receive owl’s wisdom do not gain any additional bonus spells for the increased Wisdom, but the save DCs for their spells increase.

AC Bonus (Ex): When unarmored and unencumbered, the monk adds her Wisdom bonus (if any) to her AC. In addition, a monk gains a +1 bonus to AC at 5th level. This bonus increases by 1 for every five monk levels thereafter (+2 at 10th, +3 at 15th, and +4 at 20th level).
These bonuses to AC apply even against touch attacks or when the monk is flat-footed. She loses these bonuses when she is immobilized or helpless, when she wears any armor, when she carries a shield, or when she carries a medium or heavy load.

So, if I cast "owl's wisdom" on a Monk - does his AC increase by 2 under most circumstances?

I'd say, beyond a shadow of a doubt, that it all depends on your level. A monk may very well have a 52 Wisdom, but if he's 12th level, he only gets to add +2 of that +21 to his AC, regardless of his total score. If it goes up, it doesn't matter. His class level doesn't permit any more than a +2 to AC from Wisdom.

Basically, your Wisdom bonus going up can increase your AC, but only if your monk level permits said bonus.

The AC Bonus extrodinary Monk ability gives you TWO different AC bonuses...one from wisdom and a additional AC bonus based on level.

Unless I missed some erratta somewhere the wisdom bonus is not capped by level. The ADDITIONAL bonus granted is capped.
If my 12th level monk has a 53 Wis I get +21 to my AC plus the additional +2 granted by the classes special ability.
