D&D 5E Monsters struggling to hit players? Common?

The higher you go, the more monsters use attacks that don't rely on weapon to hits. Spells auras, things with saves. I DM's an epic game where the big bad, a half dragon Hypereon made every save. The players failed every save and still one. Players are supposed to win usually. Just remember really high AC = not as good at something else. Like the Berzerker I played with an epic boon that left him with a 24 Con and a high AC. Wisdom? Not so much.

(It's also amazing how much smoother the math runs when the PCs are built with the standard array, never starting with more than a +3 modifier on any ability score . . . or point buy, I guess, but I prefer standard array as a player because there's even less room for min/maxing.)

My latest campaigns the PCs are rolled on best 3 of 5d6 in order - tons of +2 and +3 stats, but nobody has better than +3 in their attack attribute.
