Mounted combat & Reach Weapons

So I'm going to be playing a Paladin, and I really want to go with mounted combat and such... Unfortunately, my knowledge of the rules of it is pretty spotty.

For some reason, I have it in my head that a character can say he's in any of the squares occupied by his mount, for the purposes of reaching people (for example, for casting a touch spell). I can find nothing in the rules about what squares are occupied while mounted, though.

So my question is this... Could I use a reach weapon, and if someone was adjacent to my, could I say that I'm on the far side of the mount's squares, so that I can attack that adjacent foe?

A horse (not a pony) is a Large creature and thus takes up a space 10 feet (2 squares) across. For simplicity, assume that you share your mount’s space during combat.

No, you are adjacent to him because you are sharing your mounts space.
 

Mind if I ask where you found that quote (I'm not doubting you, I'm just trying to find all the places I should be looking for mounted combat rules)? A page number in the PHB or the section it's in in the SRD would be very helpful. :)

Mounted Combat

Horses in Combat

Heavy warhorses, light warhorses and warponies can serve readily as combat steeds. Light horses, ponies, and heavy horses, however, are frightened by combat. If you don’t dismount, you must make a DC 20 Ride check each round as a move action to control such a horse. If you succeed, you can perform a standard action after the move action. If you fail, the move action becomes a full round action and you can’t do anything else until your next turn.

Your mount acts on your initiative count as you direct it. You move at its speed, but the mount uses its action to move.
