Multiple attack: Charge and AoO

A Monster with multiple attacks say:
2 Claws +10 1d8+4
bite +6 1d4
gore +4 1d6

(Don't bother with the stats)
If that Monster charges can it attack with both claws?
If that Monster has an AoO can it attack with both claws?

No, and No :)

On a charge or AoO, feats and special abilities (such as Pounce) notwithstanding, a creature can make only 1 attack. You can choose the attack, but generally speaking it will be the attack with the highest bonus.

(Think of a 2-weapon fighter - they COULD charge and attack with the offhand weapon, but they aren't likely to, and in any case they don't get to attack with both)

Accualy, in general it's almost always best to use the highest damage attack when a monster charges: when you remove the penelties for mult-weapon fighting most monsters have the same attack bonus for all their attacks (for instace the ever popular celestial / fendish baddger usualy has a +5/+5/+1 claw/claw/bite, but for a charge it would use +5 [and +2 for charging] for it's bite, which is higher damage).
