Multiple attacks - how do you resolve them

Anyone got a quick system for resolving 'multiple attacks'

Such as multiple strikes from a creature with 10 tentacles?

or multiple opponents (say a goblin war band) all attacking?

Do you
- roll once for each attack
- roll multiple dice (say 10 d20s) and pick out the 'high enough ones?'
- something else

I allocate attacks verses characters usually then roll all the attacks that have the same chance to hit against each character (using multiple d20's).

All my d20's are different colours so special attacks can be allocated to a particular dice.

If the target is low on hit points I roll individual attacks and damage together until they drop and then allocate remaining attacks to the next target.

The reason I do that is two-fold, one it means you are less likely to kill a character outright in one round (dropping them to more than -10 due to multiple attacks), two as it is better tactically for the creature since he would want to remove threats rather than finish off foes that can no longer endanger him.
