I've made a feat that works like the Double Hit feat in the Miniature's Handbook called Multiple Hit. The difference is that allows characters wielding more than two weapons to attack with all of their weapons on a AoO.
However, I wanted to get some additional opinions on the matter of whether the feat should be taken once to allow all attacks or if the feat should be once for every additional attack up to the number of weapons the character is wielding minus one. (e.g. An athach would take the feat twice (in addition to the prerequisites) to be able attack with all three of its weapons.)

You can react with your off hand to make an addtitional attack along with an attack of opportunity.
Prerequisites: Combat Reflexes, Two-Weapon Fighting, Improved Two-Weapon Fighting.
Benefit: When making an attack of opportunity, you may make an attack with your off hand against the same target at the same time. You must decide before your first attack roll whether you want to also use your off hand. If you do, both attacks take the standard penalties for fighting with two weapons.
Special: A fighter may select Double Hit as one of his fighter bonus feats.
