One of the reasons I play D&D as opposed to other games, is that other games are woefully lacking in pre-generated opponents for my characters. And those that they do have are not (a) particularly well-built (looking at you, Champions) and (b) not easily matched to the capabilities of the PCs.

D&D monster books are a strength of the brand.

How do I know if my PC cleric’s holy symbol was presented strongly? In this last case, I would likely call for a Charisma check from the cleric and compare that to a Constitution check from my vampire, but I wouldn’t feel great about having done so.

I wouldn't feel great about this either, since the vampire would lose every single time, as undead in 3rd Edition don't have a Constitution score.
