Need stats for a disease not in the SRD: Rabies

As soon as you start using real diseases you are bound to find the one player that's little sister died from rabies, or cancer, or rickets, or diarrhea, or whatever.

I guarantee you that if your player's little sister was one of the two people who die of rabies each year in the United States, you know about it already . You face about the same risk of finding out that your player's little sister died from being eaten by an alligator; I wouldn't caution you against using alligators in your game.
