Non-binary population percentage?

Really what you need concern yourself with is NPCs that are either named or have a speaking roll. Demographics have their place but end up becoming background numerical noise. I have struggled with demographics regarding sentient races ins campaigns before, ie how many Elves, Dwarves, ect and it always ends up being more work than ever needed for real used worldbuilding. I don't think you would be doing anything worthwhile if you have that demographically an appropriate number of non-gendered people exist if none of them are NPC the players interact with. It's more valuable to work on respectful fidelity when it comes to representation in world design.

It really depends on how much you want non-binary people to pop up randomly.

If you want a bunch of random NPCs to be non-binary you bump up the generator chances or specifically make some NPCs be non-binary.

You can base it off numbers you know and have it come up fairly rarely.

This can vary by specific context.

Non-humans can be wildly different from real world American self identification numbers extrapolated from a survey. Perhaps non-binary is the vast elven majority. I had a player who had an ongoing theme for his PC and NPC elves that they were confused by non-elven sexual identities.

In the fantasy game it can vary for humans as well. There could be none or non-binaries could be much more common. It could vary by culture as a matter of identification or comfort with the identification.
